General Tso’s Chicken

  • 1 lb boneless chicken, skinned and cubed
  • 3 eggs, beaten
  • 1/2 c cornstarch, 2 tsp cornstarch
  • 1 1/2 tbsp rice vinegar
  • 2 tbsps rice wine
  • 3 tbsp sugar
  • 3 tbsp soy sauce
  • 1 sm onion, cut into squares
  • 1 green bell pepper, cut into squares
  • Oil for deep frying

1.  Mix cornstarch and eggs in a large bowl, add in chicken and coat thoroughly.

2.  Prepare the sauce by combining 2 tsp cornstarch, wine, vinegar, sugar and soy sauce in a small bowl.

3.  Heat oil for frying.

4.  Fry chicken in batches so that chicken is just cooked.

5.  Remove chicken and let stand to drain off some grease.

6.  In only a couple of tbsp of oil, fry onion and bell pepper.  When they are almost done, add in chicken and stir fry until chicken reaches a crispy brown.

7.  Add the sauce in and continue to stir fry.  Toss around for a couple of minutes, until sauce becomes a glaze.

Serve over rice and enjoy!

Untitled-300x225 Infertility to Pregnancy: a journeyInfertility is the hardest thing I’ve ever faced.  It hurts day after day.  You go through phases where you try to convince yourself you don’t want children, but you know it’s not ever true.  Seven years my husband and I tried to conceive.  Finally, in March 2014 we went to a fertility doctor.  I think part of us wanted to be clinical about it, after all seven years of negative tests will make one doubtful.  We  found out the reason we had never gotten pregnant was due to my not ovulating.  I’m thankful that I wasn’t.  God kept me from having any children with the wrong man.  As I’ve always heard and knew in my heart, it’s all in God’s perfect timing.  Hard to say those words when you are on your 800th negative pregnancy test, crying or angry.  Hurt in a way words will never truly capture.

The doctor we chose was at random and he was perfect.  Meeting him even felt good.  He did a pelvic exam to make sure there were not any physical problems then scheduled a blood test to find out if I was ovulating.  As it turns out, I wasn’t.  The doc put me on a medication called clomid to help force my body to release eggs.  I was to take them for five days then on the 21st day of my cycle go in and see if it had worked.

Waiting those days were killer.  Turned out my day 21 was on a Sunday so I was certain they wouldn’t be able to tell.  They were, thank God, and the even bigger blessing was that the medication had worked!  I was ovulating.

Suddenly the ability to get pregnant was in front of us, which is oddly scary.  Having wanted it for so long, we suddenly realized that we may not be ready.  LOL.  Funny how that works.  So, we decide to wait a few months.  “Get out some of the old eggs” my husband so eloquently joked.  I cried, I didn’t want to wait but I knew that it was best.  Again, God’s perfect timing.

So, the plan was in two months to start trying.  Here’s hoping nothing else is wrong!

As it turns out, God’s perfect timing is in all things.  I was saving this post so that I could do a few and do a weekly series.  Shockingly enough, God had another plan.  We are excited to announce that we are expecting in January.  For all those years of not being blessed with a baby, we are suddenly a little nervous.  LOL.  Mostly, though, incredibly thankful and overly excited!

Ragamuffin DVD

ragamuffin Ragamuffin DVD Ragamuffin by definition is:  a ragged often disreputable person; especially :  a poorly clothed often dirty child.  Funny how, in reality, that word describes all of us.  Ragamuffin is based on the life of Rich Mullins, a true story, about his life and struggles as a musician, a human and especially as a Christian.
From personal experience, I can say that sometimes from the outside it looks like Christians have no struggles.  It’s so easy to look in the ‘window’ and see Christians marching on, making it through the tough times seemingly as if nothing bad is happening.  From the outside, it appears as if they don’t struggle much at all.  Then, when one becomes a Christian, it’s almost like we expect things to be suddenly perfect.  For God to fix everything for us.  Throughout time, we learn that reality is we are all surviving our trials with peace only by giving our turbulence to God.  It’s a tough lesson to learn, I’m praying one day I’m decent at it.
I love that the movie shows the struggles.  Tells things from an honest perspective.  This is something we need more of: straightforward honesty.

PainMaster: Pain Relief on the Spot

microtherapy.jpg-250x300 PainMaster: Pain Relief on the SpotWhen I was a kid, I played with my two older cousins.  They were boys and they were tough.  They treated me like I was a weak little girl, so I was on a mission to prove them wrong.  Thus began my beginnings of being super rough on my body.  I’ve done some crazy things, walked half a mile on a fractured ankle, climbed up the sides of cliffs with my lead rope, been thrown from and dragged by horses, and so much more.  I was constantly hurting myself.  Tough girl, see, I was tough.

Now I’m grown and realize that perhaps I wasn’t so tough after all. I have hip, back, wrist, ankle and knee pain.  Good times.  Of course, I’m only 30 right now so they don’t hurt constantly yet but when they get aggravated, they make me pay.  I don’t take anything for the pain, as I know it is only going to get worse.  I’d prefer to kill my kidneys and liver when I’m too old to care about keeping them.  At the moment, I deal.  Honestly, I can handle it until it makes me mad, then it becomes unbearable.  The pain that makes me mad is the pain that either keeps me awake at night or stops me from doing what I want to do.  My wrist, for example, recently kept me from typing or doing any crafts.  Of course it’s my right wrist and I am right handed because that’s what happens when you think your body is tougher than it is!

Before I was contacted about a review, I had seen the Painmaster on various websites.  I was in the middle of severe wrist pain, which of course hinders everything I do, and I had kept it in a wrap for weeks with no improvement.  It was actually to the point that I was beginning to take aspirin for it every now and then.  That may not be much to you, but I do all I can not to take medicine of any kind.  If it’s not medically necessary, I am not in favor of taking it.

I will admit I was skeptical.  It’s an extremely small device, I wondered how efficient it would actually be.  I saw no negative effects and the pain was getting rough so I decided to give it a shot, even though it doesn’t specifically say it’s for use on your wrist.  I figured the premise was the same regardless of where the injured part was.  Besides, I had nothing to lose!  So, I put on my wrist the Painmaster per the directions and wore it for about 4 days.  It wasn’t long until the pain had been minimized and was almost gone.  Granted, my injuries go pretty deep so it will never be completely gone but the amount of pain that was left was negligible.  I barely notice it.

The PainMaster uses Micro Current Therapy to provide relief in one spot.  It is re-useable for up to 250 hours.  The only downside that I find is that it only comes with one set of patches.  With only one set, they have already started to be less sticky.  Of course, that could be due to the fact that I had it on my wrist where it is curved.  Perhaps it wouldn’t be the case if I had it on a flat surface like my back.  Regardless, the lasting power of the sticky stuff on the patches isn’t all that great.  I have a feeling the battery will far outlast the patch, which of course will make it useless.  Another thing I disliked was that it took at least 24 hours or more before I noticed a difference.  However, one can’t argue that after that period the pain was a lot milder.  All in all, I think the PainMaster is a great product.  It definitely made a difference on my wrist!

Easy Cream Cheese Pound Cake Dairy Free

My husband can’t have dairy.  Lame, I know.  So, I made this with Tofutti Dairy Free Cream Cheese and non-dairy butter.  It turned out really well.  Of course, it will be fabulous with regular sour cream and butter also.  Oh, how I miss those days!  However you make it, enjoy it!  You’ll find it hard not to go back and sneak bites.  (unless you have amazing discipline which you should totally tell the rest of us how to get!  LOL)

Easy Cream Cheese Pound Cake

Ingredients:

8 oz Cream Cheese

3 sticks of butter (equal to 12 oz or 1 1/2 cups)

3 c sugar

3 c plain flour

6 eggs

1 dash salt

1 1/2 tsp vanilla

Directions:

Cream the cream cheese, butter and sugar.

Mix in flour and eggs, rotating one egg at a time and ending with flour.

Add salt and vanilla.

Pour into greased and floured tube pan.

Bake at 125 degrees for 1 1/2 hours.

Cream Cheese Icing

Ingredients:

1 box confectioners sugar

1/2 tsp vanilla

1 stick butter

8 oz cream cheese

chopped nuts (optional)

Directions:

All should be at room temperature.  Blend well.  If it’s too thick, add a few drops of milk.  Drizzle over cake and add chopped nuts if you’d like.

Surf Sharks – an awesome new way to surf!

give-1024x682 Surf Sharks - an awesome new way to surf!Riding the waves has never seemed like such an adventure as this!  In an exciting and adorable story that kept not only my attention but my nephews as well, Surf Sharks: The First Ride is a gnarly set of fun!!!  It introduces three young sharks and three young surfers telling a story of heroism, teamwork and, of course, adventure.  This story is definitely one to be read with excitement and playfulness.  It kept his attention though and given that he is five, that’s pretty great!  LOL.  The First Ride is the beginning of what I think will be a promising series for boys and girls alike.

After we read the story, Surf Sharks were the talk of the day.  Imagine, riding a SHARK!  What fun!  My nephew declared he wanted a shark.  LOL.  Along with the book we got a fun little gift package with pop up cards, stickers and a sticker book!  That was loads of fun too!  Making the pop ups surf across the table helped us create our own adventure!

Get Jammin with #Hallabaloo

Shy-Kid-Blues_cover-art_low-res-300x300 Get Jammin with #Hallabaloo There is something about that boogie little ones get when they hear music that they enjoy. It always makes me smile and of course ensures that I boogie on with them. The laughter and joy that babies find in music is such a pure happiness. I’m not convinced any normal human being could resist that! Recently I had the pleasure of enjoying my cousin’s little one and decided she would be the best reviewer of anyone! So, I put in the Shy Kid Blues by Hullabaloo and cranked it up. Wasn’t long past the intro that those little knees started bending to their own rhythm and those adorable arms followed! At almost a year and a half, this girl loves her a good beat. Dancing and singing and moving to her own drum with that beautiful smile and big blue eyes. I didn’t get a shot of her dancing, I was busy dancing with her, but if you’ve ever seen a toddler dance then you know what I mean!

Hullabaloo has received some great shout outs, including a raving compliment from Parents Magazine hailing them “As good as it gets when it comes to children’s music.”  One can’t resist that one, curiosity requires ya to check it out!  LOL.  Though I couldn’t find any songs from this album on YouTube, you can listen to them at their site.

baby-green-sea-turtle Ezpress Yourself With GelaSkins Expressing oneself can be about anything one wants.  Sometimes the things that tend to scream ‘me’ to us isn’t the same as people would think.  While I was looking at the many designs on GelaSkins, it struck me how some of the pictures reminded me of certain people and I wondered what exactly made others think of me? While I still don’t know the answer to that question, I found a skin that makes me smile everytime I see it.  I chose a skin with a sea turtle.  I could go on and on as to why I just love the little guys, but then this post isn’t about them.  🙁

baby-green-sea-turtle Ezpress Yourself With GelaSkins GelaSkins has skins for you to put on pretty much any electronic device: phones, tablets, computers, gaming devices, pcs, headphones, you name it they probably have it!  The designs range so far I can’t even begin to tell you!  I love that their products aren’t just stuck in one genre or another, rather they have designs for tastes across the board!  Fabulous!  Something else I love is that they have free wallpapers that match the skins!  If you do it right, you can make it look like the skin keeps going over your screen.  The skin was easy to apply to my tablet even though the first time I ended up with air bubbles.  I was able to easily peel it off and reapply with no issues at all.
