Pumpkin Bread

What better treat on a cold night than pumpkin bread???  I made some for our church and our guests at Thanksgiving, and a loaf to fill our bellies later!  😀  I was initially scared to try it, but it was amazingly easy!  Also, very inexpensive!  Here goes:
3 cups all-purpose flour
1 tsp pumpkin pie spice
2 tsp ground cinnamon
1/2 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 cup butter, soften
2 cups granulated sugar
3 large eggs
1 16 oz can of pure pumpkin
1. Preheat oven to 350º and spray three medium loaf pans with nonstick cooking spray.  (I got the tin ones at Dollar Tree so that I could freeze some)  Or, you can do multiple (I forgot to count!) small loaves to give as gifts!  Don’t fill more than 2/3 full!  😀

2. In a medium bowl, combine the flour, spices, salt, baking soda, and baking powder and set aside.

 3. In the bowl, mix cream the butter and the sugar until fluffy, about two minutes. Add eggs one at a time mixing well after each addition. Add the pumpkin and combine well.
4. Add the dry ingredients stirring until just combined. Coat the cinnamon chips with 2 T. flour and stir into batter.
5. Spoon batter into prepared pans. Bake side-by-side for about one hour or until an inserted toothpick comes out clean. (Bake mini pumpkins 25- 30 and 35-40 minutes for the mini loaves.)

Note: Substitute 1/2 teaspoon ground cinnamon plus 1/4 teaspoon ground ginger, 1/4 teaspoon ground nutmeg and 1/8 teaspoon ground cloves for 1 teaspoon pumpkin pie spice.

I used my Gypsy Wanderings to make the tags, then wrote on them.  😀  I also had a loaf to eat on for dessert!  They turned out really well and everyone was pleased to take some home!  As a side note, remember when I said I ran out of brown material????  This is a basket covered with a skirt!  No one thought twice about it!!!

Thanks for visiting the Zoo!!!  Stick around and check it out!  Don’t forget to go and sign up for my Giveaway, tomorrow is the last day to sign up before our winner is drawn!!!  There is also a few giveaways here!

Girls Room Decor

I cut some images using my Cricut to help decorate my room. Thought I would post them for ya! The images were cut at 4 inches and we used glue dots to adhere them. You could also use sticky tack. The letters are wooden from Hobby Lobby and painted purple. Hope you enjoy!

Enjoy the Zoo!!! Please don’t feed the animals!

Give Thanks

Welcome November!!!  I’m so excited, apparently I really love November!  LOL.  I’ve been waiting and waiting and waiting and FINALLY IT’S HERE!!!  I love the fall colors and seeing all the things people come up with to decorate!  We began a new tradition of having Thanksgiving at our house, because most of our family is so far away and we know so many people who don’t have somewhere to go.  Last year we had 31 people in our 900 sq ft townhouse!!!  It was PACKED!!!

But, regardless we had a great time and enjoyed the wonderful company!  So today I am posting my first of what I hope to be many pieces of Thanksgiving crafts!

I made it simple.  The simple blessings are the easiest to overlook, so I made it as simple as possible!  The letters are cut from the Millionare Cricut Cart at 3 inches (I didn’t cut the background shape) and the banner are from Everyday Paper Dolls, the chearleader pendant.  I hung them with paperclips on the stick and laminated them with liquid laminate.  There are more detailed instruction on the Harvest Blessings post.

$200,000,000 Swago PLUS Spin & Win (US)

The digital rewards site Swagbucks is nearing $200,000,000 in cash and gift cards given back to it members. Since 2008, they’ve rewarded members for things we all do online, like shopping, watching videos, discovering deals, answering surveys, and searching the web.

$200,000,000 is a huge number, and to celebrate they’re holding a “Swago” promotion starting Monday, September 11th at 9am PDT!

Swago is just like bingo, but in this case you’re filling out squares as you earn points on their site for doing things you already do online. If you’re thinking of trying Swagbucks, this is a great chance to learn all about how the site works and earn bonus points while doing it. Here are a few tips:

  • Each square on your Swago Board will contain an action item to complete. They can be anything from getting a search win, completing a survey, or just visiting one of our popular stores!
  • Once you complete the action item in a particular square the square will change color signifying the action item is complete.
  • You have until 12pm PT/3pm ET on Tuesday, September 19th to mark off as many squares as possible so use your time wisely.
  • Be mindful of the patterns and their corresponding bonuses located on the right of your Swago Board. The patterns will vary in difficulty and bonus value. Once you’ve achieved a pattern, the corresponding “Submit” button will light up. You can have multiple patterns available for submission, however, you can only submit ONE pattern so choose wisely.
  • Each activity you successfully complete on your Swago Board will give you anywhere from 1-20 spins on the Spin & Win Wheel. PLUS, when you submit your board for a bonus you’ll get additional spins. The number of spins will depend on the pattern you complete. The wheel has all sorts of great prizes that you can win, and each spin is a winner!

The Spin & Win Wheel will not be available to use until 9AM PT/12PM ET on Tuesday, September 19th and will end at 9AM PT/12PM ET on Thursday, September 21st.

Fill up your board and then submit your pattern to get even more points – if you can fill in the whole board, you get a 500 SB bonus! That’s enough for a $5 gift card in their Rewards Store to the retailer of your choice.

Click here right now and click “Join” to get started! If you don’t already have a Swagbucks account, you’ll be able to quickly sign up; PLUS, if 300 SB before the first of next month, you’ll get a bonus 300 SB!

What to do with Photo Album

So, I suppose we all have old albums just lying around.  If you are like me, then you can’t throw them away because ‘you might need them someday!’  Never mind that I do scrapbooking and therefore put all my pictures in those, I still MIGHT need them!!!  After much thought, I decided I would use some old album pages to laminate a game.  It didn’t have to look good, just survive without being torn up!  Here’s how I did it:

Start with the album page, remember if yours has the journal spot on the side, it can be used in scrapbooks or to write notes and grocery lists on.
Cut it up the side so that you have the proper size.
Place whatever you are trying to cover inside the plastic. I pulled out the paper that was inside.  Originally, I tried to use a punk lighter from the 4th of July to melt the plastic, this wasn’t the greatest of ideas as the plastic smothered it out.
Better idea:  lighter!  Down side:  if you aren’t careful, you’ll burn your finger AND melt plastic to it!!!  Solution: place the plastic inside a CD case so that it is sticking out enough to melt.  Run your lighter up and down the side and melt the plastic.  Immediately run a wet paper towel over the melted plastic so that it smoothes it out.  I suggest using a zippo so that you don’t have to deal with the lighter getting hot!

I forgot to take a picture of the finished product before giving them away, but you can see the basic look of it on the side in the second shot.  It’s not fancy, but it works pretty well.  Kind of looks rustic!  LOL.  Hope you are doing well!!!

Here are some other projects you may enjoy:

Charm Keeper

I really should get a jewelry box, but the kind I want and the price tag I’m willing to pay never matches! I have a lot of charms that I switch around on my chain, and they have been hanging on one chain to keep me from losing them for a while. I HATE that! It’s a pain to get the charm I want, as I have to sort through all of them and frankly, I don’t like wasting the time! I’ve been wanting to do something for a while to sort them but I couldn’t think of how to do it using stuff I had laying around.
Then, voila! Medicine holder! PERFECT size for the small charms, and I have a larger one that can be used for larger charms! Yay!

Since it isn’t see through, I made labels for each one so that I could quickly find the charm I am looking for.

I decorated the side using scrap paper I had left from another project. I used glue dots to keep the paper on and it is working out great! No issues with gravity trying to pull it down!

On the back, I stuck magnets so that I can stick it to a board as soon as I get to that project!  I suggest using large magnets so your stuff doesn’t outweigh the magnet strength!
Hope this is a great addition to your projects! Sorry my posts have been late so much, I’ve been crazy busy with trying to buy a home, dealing with lendors and such. All prayers are solicited and appreciated as we go through this process!!!

Dutch Oven Herb Pork Loin

Dutch Oven Herb Pork Loin: Healthy, Paleo, Auto-Immune, All-around Yummy!I love cooking things that are delicious and simple.  The Dutch Oven Herb Pork Loin was quick and easy which certainly fits the bill of both!!!  It wasn’t much work to get it together and we all enjoyed it so much there were no leftovers!  The best part is that it was so great no one added ketchup or anything else!  LOL.  Chief ZooKeeper always insists on modifying things, this one he complimented repeatedly!  It would be incredibly easy to prepare the ingredients, brown, and then start after work or school.  A one pot meal with little clean up so you can get to what’s important: your life!

For our health, we chose to go to a very paleo like diet.  That’s when I realized just how much junk was truly in my ‘healthy’ diet.  I only call it junk because since I’ve switched, I’ve learned that my body was not happy with many of my food choices.  I  feel better and am healthier, that’s totally worth the sacrifice.

Dutch Oven Herb Pork Loin

Ingredients:

  • 4 pound boneless top loin roast
  • 1 tsp thyme
  • Horseradish Sauce
  • 1/2 cup water
  • 2 onions, thinly sliced (leave out for auto immune and paleo diet!)
  • carrots, bell peppers, etc as desired. sliced small

Directions:

  1. Rub pork with thyme.
  2. Heat the dutch oven on high then brown loin on all sides.
  3. When pork has been browned, brush all sides with horse radish sauce.
  4. Add the water to the pot.  Place the lid on and turn heat to low.
  5. Cook until meat reaches 140 degrees.
  6. At 140 degrees, remove pork and place in a warming area (I use the oven typically and keep it covered, you don’t want the oven on or it will cook the meat too much)
  7. Add vegetables to oven and saute.  Cook until done.

Need some fabulous desserts?  We have lots, check out this yummy Raspberry Almond Delight!
