Monster Cereals Review

IMG_4741When my husband saw the Monster cereals sitting on the counter, he was really excited. He grabbed the boxes and started reading them saying they were the same as when he was growing up. It was cute seeing him turn into a kid again for a minute, he is usually so serious! To his great disappointment he had to wait before he could try them, as I hadn’t taken pics yet!  LOL.

Daily he came home and said “did you take your pics yet?” After I finally got them done, he skipped dinner and had cereal instead. I saw him take the first bite, closing his eyes and reliving some good memory. He said it tasted like being a kid again! Judging by the look on his face, that’s a good thing. I know when we run out he is going to send me on a hunt to find more.  The retro Monster cereals are available exclusively at Target and up until October 31st if you buy three boxes you can get a Monster Bash magazine (which includes Recipes, Tips and Tricks for planning the creepiest, scariest, spookiest, most fun Halloween ever!).  You can find more info for them here also.

He has a lactose allergy so he doesn’t get to eat dairy products anymore. After reading the ingredients, we were very happy that there wasn’t any lactose inside! Bonus! There aren’t many cereals that he loves that doesn’t have dairy and he loves his cereal!

As I’m sure you can infer, we are very pleased with the Monster cereals! They all taste just like the original versions tasted and were great! If you are looking for a little nostalgia or just a yummy cereal for the kids, you’ll enjoy this one!

Dragon Noodles Recipe

Dragon Noodles RecipeSo let me start by saying that this is HOT!!!  So hot that Monkey was the only one in the house that could eat it…  Chief threw in the towel after a bite, I made it quite regretfully through my serving.  The heat was a little much.  The flavor was amazing.  Next time, I’ll be making the dish without the heat!  😀

If you’d like to make it without the sriracha, I think it would still be great.  Let me know if you try!  I’d love to hear your modifications!  Also, I have to give credit to the awesome Mrs. Cheryl, as she sent this recipe along with most of the ingredients to make it in my July Foodie Penpal Box!  It’s a free penpal program, you can follow the link and read more about it.  They have it for countries outside of the US so be sure and check it out no matter where you are from!  It’s super fun!  😀

Ingredients:

  • 12 oz pkg lo mein noodles
  • 6 tbsp butter
  • 3/4 tsp crushed red pepper
  • 3 large eggs
  • 3 tbsp brown sugar
  • 3 tbsp soy sauce
  • 1 tsp Sriracha*
  • Handful of Cilantro
  • Sliced Green Onion

1.  Cook noodles according to package directions.

2.  While noodles are cooking, prepare sauce.  In small bowl, stir together brown sugar, soy sauce, and sriracha.

3.  In large skillet melt butter, over medium-low heat.  Add red pepper to butter as it melts.  Whisk an egg in a bowl and then add to the melted butter.  Stir gently and cook through.  Once the egg is done cooking, turn off heat.

4.  When noodles are tender, drain and add them to the skillet with the cooked egg.  Also add the prepared sauce.  Turn the heat on low to evaporate excess moisture, and stir until everything is coated well with the sauce.  Sprinkle the sliced green onion and cilantro leaves (whole) on top and serve.

*I’m putting the recipe as I made it, if you like hot then go for it!  If not, I highly suggest you tone the Sriracha down.

Quick & Easy Potato Soup

Quick & Easy Potato Soup (Dairy Free)Whether it’s freezing outside or you just want some delicious comfort food you’ll love this Quick & Easy Potato Soup!  Unfortunately, not everyone has the time (or the desire) to spend hours and hours cooking a good homemade soup.  Fortunately, this one only takes an hour and is fabulous!  Also, it can be made completely dairy free, which is fabulous!  Not a lot of dairy free potato soup recipes!  Hope you enjoy it!

Ingredients:

3 Tbsp Butter (can use dairy free butter)

1 c chopped onion

3 c peeled, diced potatoes

3/4 c chopped celery

3/4 c grated carrots

2 tsp salt

1/8 tsp pepper

1/2 tsp parsley flakes

3 c chicken stock (could also use broth, any flavor would work)

Directions:

  1. Melt butter in large saucepan (I used the pot to avoid extra dishes).
  2. Add onion, saute until soft.
  3. Add in celery and saute for about a minute (doesn’t have to be exact, just helps with the flavor)
  4. Add stock, potatoes, carrots, salt, pepper and parsley flakes.
  5. Cook until all vegetables are tender.  Roughly 15-20 minutes.
  6. Enjoy!
