Country Pasta Toss: Epic, Healthy Pasta Salad to Wow Everyone

This country pasta toss blew me away! It was absolutely fantastic and everyone loved it! The only downside was the lack of leftovers!

This recipe may be the most simple BBQ recipe I’ve ever made! Everyone absolutely loved it and we all pigged out on it! While not the regular, traditional pasta salad, it is certainly a little bit healthier and just as tasty, if not more!

Country Pasta Toss Recipe

Country Pasta Toss: Epic, Healthy Pasta Salad to Wow Everyone @MyCraftyZooIngredients:

  • 3 c rotini pasta
  • 1 lb new potatoes, cut into wedges
  • 1 lb baby carrots
  • 2 c broccoli florets
  • (peas or snow peas if desired)
  • olive oil
  • 2 1/2 tbsp parsley (dried or fresh)
  • 2 tsp dill weed
  • 1/2 tsp salt
  • 4-8 oz chopped ham
Directions:
1.  Boil pasta, drain the pasta, set aside to cool. I tossed mine in a little olive oil and put it in the fridge while I prepared the rest of the ingredients.
2.  Steam potatoes and baby carrots for 5 minutes.
3.  Add in broccoli, steam for 2 more minutes.  (this is where you add peas)
4.  Add veggies to the tossed pasta with olive oil, add in the seasoning, stir.
5.  Serve and enjoy!  Very little guilt, this is super healthy!

While you do not have to prepare it in advance, you absolutely can! In a fashion similar to our Broccoli Salad Surprise and Southern Macaroni Salad,  this can be made in advance if you’d like. It only gets better with a night or two in the fridge

One difference though, you don’t have to worry about it at picnics or BBQ’s quite as much since there is no mayo! Of course, that does not mean let it sit out for hours but I don’t have to tell you that!

That particular recipe is one of my favorites, plus it’s way less sugar and calories than those in the actual Sonic limeade!
