Country Pasta Toss: Epic, Healthy Pasta Salad to Wow Everyone
This recipe may be the most simple BBQ recipe I’ve ever made! Everyone absolutely loved it and we all pigged out on it! While not the regular, traditional pasta salad, it is certainly a little bit healthier and just as tasty, if not more!
Country Pasta Toss Recipe
Ingredients:
- 3 c rotini pasta
- 1 lb new potatoes, cut into wedges
- 1 lb baby carrots
- 2 c broccoli florets
- (peas or snow peas if desired)
- olive oil
- 2 1/2 tbsp parsley (dried or fresh)
- 2 tsp dill weed
- 1/2 tsp salt
- 4-8 oz chopped ham
A Tip & Some Other Sides
While you do not have to prepare it in advance, you absolutely can! In a fashion similar to our Broccoli Salad Surprise and Southern Macaroni Salad, this can be made in advance if you’d like. It only gets better with a night or two in the fridge
One difference though, you don’t have to worry about it at picnics or BBQ’s quite as much since there is no mayo! Of course, that does not mean let it sit out for hours but I don’t have to tell you that!
Drinks that Go Perfectly!
You may also love our Almost Fresh Lemonade! It tastes almost exactly like fresh squeezed lemonade! If you aren’t a lemonade fan, you may love this Mock Sonic Strawberry Limeade recipe! That particular recipe is one of my favorites, plus it’s way less sugar and calories than those in the actual Sonic limeade!

Love finding fresh new salad recipes for the long hot summer. Just the two of us at home now so it’s fun to do salads that are filling and tasty. Thanks for sharing the recipe.

This looks like a great cookbook!
My sister in law is the cook in our family. She has the family to her home for special occasions. Mom is a southern woman but at 93 she is not as good any more. there is nothing my sister law enjoy more than trying new receipts. She owns a bar/restaurant and she always sells out of her specials.
My mom has always been a talented and creative cook, but not the time she made a mandarin orange pasta.
Mock Sonic Strawberry Limeade sounds good.
The recipes in this book look delicious and healthy. We had a great family reunion a few years ago.

looks good
my mom was not a great cook, . she alway cooked basic things, we were a large family , so we ate a lot of meat and potatoes type meals. when i left home , i loved to explore many differnt types of food. i became a cook, and love trying new recipes. my collection of cookbooks is large. my prize cookbook belonged to my grandmother.
This looks like such a wonderful and fun cookbook. I wish that I had collected my grandmother and mother’s recipes. I miss those delicious dishes that they made.
I would love to have a book made from all the women in my family – to be passed along to all the nieces and nephews. I think that’d would be magnificent! I used to love to cook and bake with anyone in my family – the talking while you cooked is a great memory and then making them later – it all comes back.

This would be a good to learn about regional recipe favorites.
This salad really sounds like one my kids would love. I love finding new recipes in cook books
