Peanut Butter Cookies & 52 Weeks of Cookies

PeanutButterCookies

I have an old recipe book from my childhood that is full of old, simple but delicious recipes.  While they aren’t necessarily new foods, they frequently remind me of my being a little girl.  This particular recipe book sat for years on my Mom’s bookshelf.

When I moved out, I went back home and gave it freedom from my Mom’s house, she never really used them and didn’t mind my procuring it.  I write in it now: my modifications, when I used the recipes, and the reactions I get.  If it’s a special occasion, I note that too.

I don’t know that anyone will ever care about my notes but they bring back good memories when I see my notes.  I attempted to pass the tradition down and will continue to do so because with these times and everything being online it seems that little things like this may become obsolete.

This particular cookbook lost it’s covers long ago, so I can’t share the title.  However, I can say that the original recipe was submitted by Debbie Salmon.  I have modified it slightly.  I hope you enjoy these cookies as I enjoyed making them as a girl.

Peanut Butter Cookies

Ingredients:

  • 1 cup crunchy peanut butter
  • 1 cup sugar
  • 1 egg, beaten
  • 3 tsp baking powder

Directions:

  1. Combine all ingredients well.
  2. Roll into balls similar in size and lay on pan.  Make a criss-crosss imprint on the ball with a fork to smash them down.
  3. Bake 8 to 10 minutes at 350 degrees.
  4. Remove before they are too brown as they will brown a little more when you put them on wire racks to cool.

Are there any modifications you like in your peanut butter cookies?

I’d love to hear stories of childhood baking, they make my heart smile.  Hope you enjoy.

To My Fellow Cookie Lovers:

Check Out 52 Weeks of Cookies by Maggie McCreath!

52 Weeks of Cookies
How one Mom refused to be beaten by her son’s deployment.
Faced with her only son, not even 21 years old, going off to war in Iraq for the second time with only five days notice, Maggie McGrath had to make a choice. She could let the fear overwhelm her or she could find something to do. So, to keep her sanity (I’m assuming as a mother), she turned to a past time that had always brought her peace: baking.
Her book includes a recipe a week for an entire year, as well as genuine real feelings of fear, grief, laughter, gratitude and joy. Get a glimpse of a military mom’s experience along with 52 fabulous cookie recipes!

I always allow my daughter to select a new cookie recipe each year! There was a strawberry cookie thumbprint cookie that I wish I had a recipe for. We keep trying new ones but it just isn’t the same LOL

Seems like I’ve seen a thumbprint recipe with strawberry in the center in one of my old boxes. I’ll go in search and maybe it will be the one. I have a ton of old cookbooks!

I totally get that! It’s frustrating when the batches don’t turn out right! The only challenge I’ve ever had with this recipe has been overcooking them as I tend to either walk away or forget that they will continue to cook for a bit after I remove them! Hopefully this recipe will be the one that turns out perfect for you every time!

This book looks great! I used to love baking cookies with my daughter (until she got to be a better baker than I am, and would just bake on her own). I still have very fond memories of one summer when I spent every day with my aunt & cousins (while my mom worked during the days). My aunt only had boys, so she & I spent a lot of time together in the kitchen with her teaching me. My favorite were always the toll house cookies!

That is an awesome memory! One of my regrets is that when my Monkey started being able to bake well, I stopped baking with her as much. If I could go back, I’d definitely do that more often!

This is close to my mother’s recipe that she gave me many years ago now. A cup of sugar, a cup of peanut butter and an egg & roll the balls in sugar then flatten with a fork. I love any kind of cookie but easy cookies just seem to taste better!
